Leviathan


Sawfish are on the endangered species list. The big ones grow up to 21 feet long, a leviathan you don’t want swimming up under you for a sniff.


Raining. Grey sky. Nice. Back screen porch again, nice. Breakfast sitting here, bite at a time. What? Considered a collard sandwich. No, really. Our best collards are from one of two Bills. Neighbor Bill brings collards over in season, calls to say he’ll be over in a few minutes, picks them in his garden and brings a huge bunch. Word is “mess” actually, a mess of collards. We slice them very thin, put in a large pot with bit of water to steam down. Our other best collards are from Grocery Outlet, which we call Bill’s. The outlet here in St. Andrews at 98 and Beck. 

No collard sandwich because they are very wet and my bread is very thin. Bread from Bill’s. So, a cheese sandwich. Extra thin whole wheat bread, thin spread mayonnaise, shake of parmesan on each slice for enhanced taste, slice of swiss cheese, close up and feast. Coffee, black.

Feast in heaven will be collards cooked with ham or bacon fat, steamed okra, lamb shanks with carrots, potatoes, mushrooms, onions, thick brown gravy. Don't like the heavenly menu? Go to the the Hot Spot Cafe for pickled pig snout and then lunch is over, everybody back on your head.

Did my reading first this morning. James Martin, S.J. Got my retreats lined up for this summer, one in June, one in July, one in August, five days each plus day going, day returning.  

Why swiss cheese? Less salt than cheddar.

From trimming back grapefruit trees we have gotten half a dozen enormous grapefruit, red or pink. Linda sectioned one with the grapefruit knife, the one with the sawfish blade, 

and brought me half to eat with a grapefruit spoon. OK long as it's 12 hours away from statin.

Breakfast dessert.
